Proudly distilled, matured and bottled at Rademon Estate Distillery in County Down, this exceptional expression showcases the craftsmanship, innovation and character of our independent, family-owned distillery.

Initially matured for five years in ex-Bourbon barrels, this Single Malt was then finished for a further two years in a Mourne Mountains Brewery Stout Cask, creating a beautifully layered whiskey with remarkable depth and complexity.

Our signature Single Malt character of fresh green orchard fruits and creamy milk chocolate is complemented by the rich influence of the stout cask, introducing indulgent notes of dark chocolate, roasted coffee and sweet malt.

Double distilled in traditional copper pot stills, including one of the smallest whiskey stills on the island of Ireland, this limited release celebrates the art of exceptional cask maturation.

Bottled at a natural cask strength of 58% ABV, non-chill filtered and presented in its natural colour, preserving the whiskey's authentic character and full-bodied flavour.

A rare distillery-exclusive release, celebrating seven years of maturation and the distinctive influence of stout-seasoned oak.

Tasting Notes

Nose

Inviting aromas of freshly brewed mocha coffee unfold alongside sweet malt, gradually revealing layers of rich chocolate as the whiskey opens in the glass.

Palate

Rich and full-bodied, with sweet malt leading into indulgent layers of dark chocolate and roasted coffee. The stout cask influence brings depth and complexity, beautifully balanced by crisp green apple, delicate orchard fruits and hints of creamy crème brûlée.

Finish

A medium-to-long, beautifully rounded finish, where rich coffee and chocolate notes linger alongside the distinctive stout cask character. Fresh green apple and orchard fruits gradually reappear, complemented by a gentle touch of warming malt spice.

This distinctive Single Malt began its journey with five years of maturation in ex-Bourbon barrels, developing the signature orchard fruit and milk chocolate character of Shortcross Irish Whiskey.

A further two years in a Mourne Mountains Brewery Stout Cask introduced a deeper, richer dimension, enhancing the whiskey with indulgent notes of roasted coffee, dark chocolate and sweet malt.

The result is a beautifully integrated expression that celebrates the relationship between Irish whiskey and stout, bringing together the character of two carefully crafted drinks.
